Авокадо, фаршированный крабовым мясом

На 4 порции
-2 спелых авокадо
-1 банка мяса крабов кусочками
-сок половинки лимона
-немного жирных сливок 35%
-соль, перец

Авокадо разрезать вдоль, удалить косточку. Вынуть ложкой мякоть и нарезать кубиками. Выложить в миску, полить соком лимона, посолить, поперчить и очень осторожно перемешать. Добавить мясо крабов, полить сливкми и снова слегка перемешать. Наполнить салатом половинки шкурок и украсить.

Quick Tomato Soup

Ingredients:

-3 tablespoons olive oil
-2 carrots, peeled and chopped
-1 small onion, chopped
-1 clove garlic, minced
-1 (26-ounce) jar marinara sauce
-2 (14-ounce) cans chicken broth
-1 (15-ounce) can cannellini beans, drained and rinsed
-1/2 teaspoon red pepper flakes
-1/2 cup pastina pasta
-1/2 teaspoon salt
-1/2 teaspoon freshly ground black pepper


1. Warm the olive oil in a large soup pot over medium-high heat
2. Add the carrots, onion, and garlic and saute until soft, about 2 minutes
3. Add the jar of marinara sauce, chicken broth, cannellini beans, red pepper flakes, pasta, salt and pepper
4. Simmer for 10 minutes
5. Ladle into bowls and serve

Lemon Honey Cookies

Ingredients:
-1/4 cup sugar
-7 tablespoons butter, softened
-2 teaspoons grated lemon rind
-1/3 cup honey
-1/2 teaspoon lemon extract
-1 large egg
-1 3/4 cup whole-wheat flour
-1 teaspoon baking powder
-1/2 teaspoon salt
-1/4 cup plain yogurt
-cooking spray
-1 cup powdered sugar
-2 tablespoons fresh lemon juice
-2 teaspoons grated lemon rind

1. Preheat oven to 350 degrees F
2. Beat sugar, butter and lemon rind with a mixer at medium speed until light and fluffy
3. Add honey, extract, and egg; beat until well-blended
4. Lightly spoon flour into dry measuring cups; level with a knife
5. Combine flour, baking powder, and salt, stirring well with a whisk
6. Add flour mixture to sugar alternately with yogurt, beginning and ending with flour mixture
7. Drop by tablespoons 2 inches apart onto baking sheets coated with cooking spray
8. Bake for 12 minutes or until lightly browned
9. While cookies are baking, combine powdered sugar and juice in a small bowl; stir with a whisk
10. Brush powdered sugar mixture evenly over hot cookies
11. Sprinkle evenly with 2 teaspoons rind
12. Cool on wire racks
